Efeito da temperatura no comportamento reológico das polpas de caju e goiaba

Neste trabalho de caráter experimental, determinou-se o comportamento reológico das polpas de goiaba (Psidium guajava, L) e caju (Anacardium occidentale, L). As amostras foram analisadas nas temperaturas de 10oC, 20oC, 30oC, 40oC, 50oC e 60oC, por meio de um reômetro Haake Rotovisko, com sistema de placas paralelas pq 45, e os dados experimentais foram ajustados utilizando-se o modelo reológico Mizrahi-Berk, o qual se prestou satisfatoriamente à descrição do comportamento reológico da polpa de goiaba. A polpa de
caju apresentou um comportamento reológico que não pode ser descrito adequadamente pelos modelos usuais.
